Orecchiette with rocket

Preparation: 10 minutes

Cooking time: 20 minutes

Ingredients for 4 people:

  • 300 g of orecchiette
  • 300 g of rocket
  • 8 cherry tomatoes cut in half
  • 2 cloves of garlic, crushed
  • 1 chili pepper
  • 2 tablespoons of extra virgin olive oil
  • Salt

Preparation:

Clean and wash the rocket. Cook the rocket in plenty of salted water for 5 minutes.

Add the orecchiette and let everything cook. Meanwhile, in a small pan, put the oil, garlic, and chili pepper.

As soon as the garlic turns golden, add the cherry tomatoes and cook for 5 minutes.

Once the vegetables and pasta are cooked, season with the tomato sauté and serve.

Notes:

If wild rocket is not available, cultivated arugula can be used: in this case, increase the quantity to 500 g because it has a less intense flavor. Depending on taste, you can add chili powder or pepper.
