Keeping Pugliese Pasta Traditions Alive

Orecchiette, the most iconic pasta shape of Puglia, have been hand-shaped on wooden boards for generations. I make mine using an old wrought-iron tool that belonged to my grandmother, known in my local dialect as a "rasaul". I learned this craft alongside my mother, and I share it today in the same spirit: with simplicity, joy, and a deep love for this living heritage.

I am an active volunteer member of Pugliesi nel Mondo UK, a non-profit association promoting the cultural heritage of Apulia in the United Kingdom. I bring my pasta demonstrations to their events — freely and with great joy.
