Orecchiette, cavatelli, strascinati, troccoli — the handmade pasta forms of Puglia have been shaped on wooden boards for generations, passed down through families without a recipe ever written down. I learnt them at my grandparents' side in Andria, and I share them today with the same spirit: freely, with joy, and with great love for this living heritage.
