Keeping Pugliese Pasta Traditions Alive

Demonstrations and workshops on handmade Puglian pasta — orecchiette, cavatelli, strascinati and more. Shared freely, for the joy of passing on a living tradition.

Orecchiette, the most iconic pasta shape of Puglia, have been hand-shaped on wooden boards for generations. I make mine using an old wrought-iron tool that belonged to my grandmother, known in my local dialect as a "rasaul". I learned this craft alongside my mother, and I share it today in the same spirit: with simplicity, joy, and a deep love for this living heritage.
