Ingredients for 4 people:
- 200 g of cauliflower
- 300 g of fresh orecchiette
- 2 tablespoons of extra virgin olive oil
- A handful of crumbled bread crumbs
- Salt
- Pepper
Preparation:
Clean the cauliflower by detaching the florets and the most tender leaves. Rinse them under running water.
Cook the cauliflower for 10 minutes in plenty of salted water.
Add the fresh orecchiette and drain after 2 minutes, leaving a ladle of cooking water to keep the dish sufficiently moist.
Separately, in a small pan, brown the breadcrumbs in the oil. Season each dish with the breadcrumbs and pepper.
Notes: If you use dried orecchiette, immerse them in boiling water together with the cauliflower because the cooking times are longer.
Variations This dish can be seasoned with anchovies instead of breadcrumbs. Another seasoning can be made with cherry tomatoes fried in oil with a clove of garlic.
