The "rasaul" (the dialect name from Andria for spatula)

It is an object forged from ancient culinary wisdom.

The traditional spatula for making orecchiette is only produced in the northern Bari area by blacksmiths who craft it from wrought iron.

The spatula must have the right proportions for easy handling and the end part must not be sharp.

This spatula belonged to my grandmother, and I still use it today to make orecchiette in the best way possible.
