Troccoli with Clams
A traditional Italian pasta dish featuring clams prepared with garlic, chili pepper, white wine, and fresh tomatoes.
Ingredients
- 300 g troccoli pasta
- 1 kg clams
- 2 cherry tomatoes
- 1 garlic clove
- 1 chili pepper
- 3 tablespoons extra virgin olive oil
- 1/2 glass white wine
Preparation
- Soak clams in salt water for minimum 2 hours, then rinse thoroughly.
- Heat 1 tablespoon oil in pan with clams over high heat until all open.
- Cool slightly, remove clams from shells, discard unopened ones, filter cooking liquid.
- Reserve some clams in shells for garnish.
- Add 2 tablespoons oil, garlic, chili pepper, clams with liquid, parsley, halved tomatoes, and wine to pan.
- Cook 5 minutes at high heat uncovered.
- Add reserved clams in shells.
- Cook troccoli separately until al dente, add to pan.
- Sauté together 2 minutes over high heat with constant stirring.
- Serve garnished with chopped parsley.
