Troccoli with Clams

A traditional Italian pasta dish featuring clams prepared with garlic, chili pepper, white wine, and fresh tomatoes.

  1. Soak clams in salt water for minimum 2 hours, then rinse thoroughly.
  2. Heat 1 tablespoon oil in pan with clams over high heat until all open.
  3. Cool slightly, remove clams from shells, discard unopened ones, filter cooking liquid.
  4. Reserve some clams in shells for garnish.
  5. Add 2 tablespoons oil, garlic, chili pepper, clams with liquid, parsley, halved tomatoes, and wine to pan.
  6. Cook 5 minutes at high heat uncovered.
  7. Add reserved clams in shells.
  8. Cook troccoli separately until al dente, add to pan.
  9. Sauté together 2 minutes over high heat with constant stirring.
  10. Serve garnished with chopped parsley.
