Cavatelli and Squid
A traditional Italian pasta dish featuring stuffed squid served with cavatelli and tomato sauce.
Ingredients
- 2 medium squids
- 500g tomato sauce
- 300g cavatelli pasta
- 1 garlic clove
- 2 tbsp extra virgin olive oil
- 2 eggs
- 3 tbsp grated pecorino cheese
- 3 tbsp breadcrumbs
- 1 tbsp chopped parsley
- Salt and pepper to taste
Preparation
- Clean the squid: remove heads and innards, discard the transparent bone, eyes, and mouth. Rinse thoroughly and peel off the skin.
- Prepare filling: chop squid tentacles and heads. Combine with eggs, cheese, breadcrumbs, parsley, salt, and pepper.
- Stuff squid bodies with mixture and secure openings using toothpicks.
- Heat oil in pan, add crushed garlic and stuffed squid. Cook 5 minutes.
- Pour in tomato sauce, cook 30 minutes, adding water as needed.
- Boil cavatelli separately in salted water, drain well.
- Toss pasta with sauce and sliced squid. Garnish with fresh parsley.
