Cavatelli and Squid

A traditional Italian pasta dish featuring stuffed squid served with cavatelli and tomato sauce.

  1. Clean the squid: remove heads and innards, discard the transparent bone, eyes, and mouth. Rinse thoroughly and peel off the skin.
  2. Prepare filling: chop squid tentacles and heads. Combine with eggs, cheese, breadcrumbs, parsley, salt, and pepper.
  3. Stuff squid bodies with mixture and secure openings using toothpicks.
  4. Heat oil in pan, add crushed garlic and stuffed squid. Cook 5 minutes.
  5. Pour in tomato sauce, cook 30 minutes, adding water as needed.
  6. Boil cavatelli separately in salted water, drain well.
  7. Toss pasta with sauce and sliced squid. Garnish with fresh parsley.
